Etymology · व्युत्पत्ति
'Amṛta' means nectar of immortality or 'not-death' and 'Īśvara' means Lord. He is the master of the nectar that bestows deathlessness.
Meaning
Lord of Immortality. This name doesn't promise that your physical body will live forever; it promises that you will discover the part of you that was never subject to death. Amruteshvara is the source of the 'Mrit-Sanjivani' power. He is the master of the internal pharmacy that secretes the nectar of peace and joy when the mind becomes still. To worship him is to drink from the fountain of eternal life, moving from the fear of 'ending' to the celebration of 'being.'

During the churning of the ocean (Samudra Manthan), Shiva drank the poison (Halahala) to save the world, but he is also the true master of the Amrita (Nectar) that emerged. It is said that the Amrita is actually the 'Soma' that flows from Shiva's moon-crowned head. The story of Shukracharya, the guru of the Asuras, who performed intense penance to Shiva to receive the 'Mrit-Sanjivani Vidya' (the science of reviving the dead), shows that Shiva is the ultimate custodian of life force.
